This has become my favorite quick snack recipe. I have several dips that are quick & easy that I often pair these with, but they are also good alone. AND they are easy to modify. Doubling (or tripling) the recipe is no problem, and they lend themselves to add-in spices and herbs well, too.
I’ve come across a ton of similar recipes online, but I’m pretty confident mine is the simplest.
Super Easy Nut Crackers
Ingredients
1 cup nut meal (I’ve tried almonds & walnuts)
1 egg white
Optional Ingredients:
salt, pepper, garlic powder/granules, dried herbs (rosemary would be yummy), curry powder, etc.
Directions:
Combine ingredients (I use a fork) in a bowl until well mixed – you might not think one egg white will cut it, but keep mixing!
Plop mixture down onto a parchment paper lined cookie sheet (or parchment paper on the counter top if your baking sheet isn’t flat).
Cover with another sheet of parchment paper and use a rolling pin to flatten cracker dough. The thinner you roll it, the crispier the crackers will be. See photos below.
Lift and discard top sheet of parchment paper, and bake on the bottom sheet (and cookie sheet) at 300 for 20 minutes.
Check them often as the baking time will vary greatl depening on how thin your crackers are and which nuts you choose.
They should be ready when the edges are starting to darken and they feel crisp to the touch.
You can score them with a knife while they are warm, or just wait till they cool and break them off into less uniform portions like we do.
